This year I can not look over the zucchini mountain I've harvested. And there is still no end. We love zucchini soup with chopped Frankfurter (Vienna) Sausage and potatoes. But at some point you want no more soup and my frozen stock is huge. So there have to be a new recipe and I've tried this amazing, superquick and easy recipe and it tastes sooo yummy! However, I replaced 1/3 the amount of vinegar with water and still tastes great. And I think the recipe is flexible enough to add some other spices. So here it is:
1 kg (2,2 lb) Zucchini, chopped as small as you like
375 ml (1,59 cup or 12,68 oz) apple vinegar
375 ml (1,59 cup or 12,68 oz) olive oil
5 cloves of garlic, sliced
2 onions, sliced
12 fresh leaves of basil
2 teaspoon salt
pepper
Put all ingredients together in a pot and bring to a boil. After 5 minutes of cooking time take off the fire and fill immediately into clean sterilized jars. Wait short until the oil comes up by gently tapping on the table, shake Zucchini getting into shape, so that no air bag is in between. Close immediately.

hahaaa ja ich liebe zucchetti auch, aber irgendwann reichts auch mir!!! aber so eine gefüllte zuchetti mit hackfleisch und reis...mmmmmmh das wäre jetzt lecker!!!

Thank you for this nice idea! In our house we have a problem - i LOVE courgettes but my husband doesn't so I only get to cook them when he is away...now that they are in season and so reasonably priced maybe I should make something like this for the winter.
