My pumpkin harvest was extremely good. Hokkaido (Red Kuri) and butternut. Butternut I planted for years, but this time I also tried Hokkaido, and the tasteful pumpkins with the ideal size are integrated into my planting plan. In search of new pumpkin recipe, I stumbled over this pumpkin risotto and have it already prepared twice this week on express wish of my daughter. I cooked with the Hokkaido squash and I skipped the mushrooms. Delicious!
