OK, now this is one of my favorite recipes. It’s quick and tasty. I still have a lot of zucchini, good that they keep very long.
Zucchini Mix Sweet-and-Sour
1 kg (2,2 lb) zucchini
2-3 onions
3 carrots
2 paprika peppers
3 teaspoon salt
1 teaspoon mustard seeds
½ teaspoon pepper corns
1 teaspoon curry powder
100 g (0,22 lb) sugar
some dried dill
some lemon juice
500 ml (16,91 oz or 2,11 cup) water
450 ml (15,22 oz or 1,9 cup) vinegar
200 ml (6,76 oz or 0,85 cup) apple juice
Put water, vinegar and apple juice in a large pot. Bring to a boil, add sugar and spices. Add chopped zucchini, carrots, onions and peppers, bring to a boil again. Fill the vegetable hot in jars and seal immediately.
